Italian cuisine with Therese: Fennel and Orange salad

Serves 6

INGREDIENTS:

2 tbs orange juice
1 tbsp olive oil
1 tbsp red vinegar
1 tsp caster sugar
1 radicchio rosso, leaves separated and torn
2 cups baby rocket leaves
1 small fennel, trimmed and thinly sliced
1 orange, peeled and coarsely chopped

PREPARATIONS:

  • Combine the orange juice, oil, vinegar and sugar in a jug.
  • Combine the radicchio, rocket, fennel and orange in a a bowl. Add dressing. Season with salt and pepper and mix well.
