INGREDIENTS: tsp = teaspoon tbsp = tablespoon
- 1.5 kg boneless Chicken Thigh & Legs (breast optional, easily dry when BBQ)
- 3 Leeks
- 1.5 kg Japanese sushi Rice
- Garlic
- Ginger
- Small Bamboo Skewers
Marinate :
- 1 tsp Minced Garlic (about 3-4 clove)
- 1 cup Soy Sauce
- 1 cup Calamansi Juice or Lime
- 1.5 cup Banana Catsup (Norvina or any Asian Store)
- 1 liter Sprite (Optional)
- 500 gr Brown Sugar
- 1 tsp Salt
- 1 tbsp Black Pepper (ground)
Note : Mix all marinate in a bowl and set aside
Sauce :
- 500 ml Rice Wine Vinegar or Cooking Wine or Sake
- 250 ml Mirin
- 250 ml Soy Sauce (always to taste)
- 100 gr Ginger
- 3-4 Cloves of Garlic
- 2-3 tbsp Brown Sugar.
Stir fry Garlic & Ginger until fragrant, then add Rice Wine Vinegar or Cooking Wine or Sake simmer for 3 minutes to remove alcohol and gently add Mirin, Soy Sauce and Brown sugar continue simmering until thicken.
DIRECTIONS :
- Soak Skewers in cold water – set aside.
- Cut chicken into bite pieces – set aside. (always work on cold chicken, if not working put it in ref. and after handling the chicken wash your hands-clean to avoid cross contamination with other ingredients).
- Cut leeks same size as the chicken.
- Finely chop some leaks for dressing.
- Get skewers and alternately put the chicken and leeks, be innovative, standard set – 3 chicken-3 leeks.
Rice :
- Clean Rice 3 times before cooking ( optional soak for 30 mins.)
- Standard 1rice :1 water ratio, but always look at the instructions of the product on how to cook.
- Medium Heat boil the rice estimate 5-7 mins. (always visual check) after that lower the heat and cook for another estimate 5-7 mins (always visual check).
Let’s Cook :
Two ways :
1st : Marinate some Chicken for 30 min. or more – set aside.
2nd : some don’t marinate.
1st Procedure with Marinate
- Prepare a grill pan (optional frying pan).
- Heat the pan Medium High, then add little oil when hot, but not too hot. Note : Hot pan & Cold oil don’t stick.
- Grill the Chicken, occasionally basting the chicken with marinate.
2nd Procedure without Marinate
- Prepare a grill pan (optional frying pan).
- Heat the pan Medium High, then add little oil when hot, but not too hot. Note : Hot pan & Cold oil don’t stick.
- Grill the chicken when it’s cooked set aside and put some cook sauce.
