Koren cuisine with Ji Eun – Bibimbap

Serves 4

INGREDIENTS:

(tsp = teaspoon tbsp = tablespoon)

3 cup sushi rice
200g beef meat
100g shredded/grinded meat
100g young zucchini
2 carrots
100g bean sprouts
100g shitake mushrooms (if fresh, less if dried)
4 eggs
50g korean red pepper paste
1 onion
1 daikon radish
2 tbsp sesame seed
10 tbsp sesame oil
3 tbsp oil
2 tbsp soy sauce
1½ tbsp sugar
1 tbsp salt

 

DIRECTIONS:

  • Cook the rice (1:1 water:rice)
  • Cut the young zucchini in thin sticks of approximatly 5 cm long and soak it in salted water for a little while (vegetable should stay crisp). Squeeze the water out and saute in a pan. Sprinkle on some salt and sesame oil
  • Cut the mushrooms in slices and put it in boiling water. Squeeze out the water and then drizzle on some salt and sesame oil
  • Cut the carrot in long thin sticks, then fry it in a pan with a little oil and salt
  • Cut the reddish in long thin sticks and put it in boiling water. Then remove the water and put on some sesame oil and salt
  • Put the bean sprout in boiling water.  Then remove the water and put on some sesame oil and salt
  • Cut the meat beef in thin slices and put them in the pan along with 2 tbsp soya sauce and 1½ tbsp sugar and 1 tbsp sesame oil
  • Put 2 tbsp of oil in a frying pan, then put the grinded meat in the pan and mix in small pieces of chopped onion along with 50g korean red pepper paste  (spicy !) mixed in
  • Fry 4 egg
  • Put the rice in a bowl along with everything else on top then add sesame oil and the seeds. Serve 🙂
  • Before eating mix everything together. Enjoy!
