Sushis with Obbie – Sauces

PONZU SAUCE

serves 6

INGREDIENTS:

  • 1 cup vinegar
  • 1 cup soy sauce
  • ¼ cup sake
  • 1 cup katsuobushi (bonito flakes)
  • ¼ cup sugar
  • 4-5 lemons (⅔ cup lemon juice)

Mix all the ingredients together and adjust according your taste

SPICY MAYO

serves 6

INGREDIENTS:

  • 4 parts mayones
  • 1 part chili sauce (sambal or sriracha)

Mix all the ingredients together and adjust according your taste

TEMPURA BATTER

serves 6

INGREDIENTS:

  • ½ cup all purpose flour
  • ½ cup corn starch
  • ¾ cup cold water
  • ¼ cup sake
  • 1 egg
  • salt to taste

Whisk all the ingredients together. You can use shrimps, fish, vegetable for the Tempura. Just soak them in this sauce and then in flour+salt+pepper. Deep fry until you have a nice brown color
