Thai cuisine with Bammut: Whole Fish fried with Tamarind

serves 4

INGREDIENTS:

4 seabass or other white fish
1 dl vegetable oil
100 g tamarind paste
200g palm sugar
1/2 dl water
1/2 dl coconut milk
1 chopped red chili
20 g fresh ginger
2 cloves garlic
1/2 dl fish sauce

PREPARATIONS:

Tamarindsauce:

 

  • Add the tamarind and all the rest of the ingredients in a pot and warm up while stirring until it gets thick.

 

Prepare the fish:

 

  • Cut 3 slices on the side of fish, and fry it on a very hot pan or wok for about 5 min on both sides. Double check if the fish its cooked through. Then add the tamarind sauce on the fried fish and serve.
