INGREDIENTS: ts = teaspoon tbsp = tablespoon
5 tbsp olive oil
1 big onion
2 red pepper bell
2 green pepper bell
2 yellow pepper bell
1 big aubergine
1 big zucchini
4 cloves of garlic
6 fresh tomatoes
fresh herbs as basil and thyme
salt and pepper
PREPARATIONS:
- Chop all the vegetables up into cubes
- Blanch the onion and garlic before adding all the other ingredients
- Let it simmer for 45 minutes. Add salt and pepper at the end.
