Greek with Alexandra – Aubergine salad

serves 4

INGREDIENTS: Tbsp : Tablespoon Ts : Teaspoon

1 baked aubergine
1-2 tbsp olive oil
1 handful parsley
2 tbsp finely chopped pickled red pepper (syltet)
1ts vinegar
1 glove grated garlic
1tbsp salt


  • Clean the aubergine (take off the skin) and smash it slightly in a ball with a fork
  • Add all the other ingredients and stir
