INGREDIENTS: tsp = teaspoon tbsp = tablespoon
1.5 kg Beef Thinly Slice (Bacon Slice)
1 Chinese Cabbage (optional Hjerte Salat)
5 bunch Stalk Small Leeks
550 gr Shiritaki Noodles (Rice Noodles Dry or Fresh)
1 kg Tofu (Baked or Fried)
30 pcs. Shitake Mushroom
3 Small bunch around (50-100 g) Enoki Mushroom
8 thick Slices Carrots
3 White Onion
12 Fresh Eggs
Warishita Sauce (Sukiyaki Sauce optional Ponzu Sauce) :
1 liter Rice Wine Vinegar
500 ml Cooking Wine or Sake
250 ml Mirin
300 ml Light Soy Sauce or Kikkoman (Less Salt Soy Sauce) – to taste
3-4 Cloves Garlic
50 gr Fresh Ginger
1 cup Brown Sugar
Beef Fat or Butter and Cooking Oil
DIRECTIONS :
- Beef should be at room temp. before cooking.
- Soak the Rice Noodles (15-20) if dry and cook al dente (7-10 mins.)
- Grill, Fry or Baked Tofu and cut into small size (bite size).
- Wash clean Chinese Cabbage and cut into 3 pcs. per leaves
- Cut White Onions into thick pieces
- Cut Leeks 1 1/2 inches in length.
- Clean Shitake Mushroom, don’t wash in water, just use towel paper (tissue ) for cleaning, design.
- Prepare Enoki Mushroom by separating the strands (do not cut).
- Cut Carrots in thick circular size and design.
- Crack Eggs and put into small container – set aside.
- Crush Garlic & Ginger.
Note: all ingredients should be set aside
Sauce :
- Combine Rice Wine Vinegar and Cooking Wine or Sake boil for 3 mins. to remove the alcohol.
- Add Mirin & Soy Sauce (to taste) and simmer until a little bit thicken – set aside.
- Add Sugar to taste
Let’s Cook :
- Prepare a big/large pot and add Beef fat or Cooking oil or Butter, some Leaks slices stir fry until fragrant and then add Beef Slices – little sauce at a time until the beef give it’s fragant and cook. (visual check/a little bit brown) – set aside.
- In the same Large Pot stir fry Shitake Mushroom until tender and arrange it in the pot to accomodate other ingredients. Lower the heat.
- Add the Beef, Carrots and arrange, pour some sauce – lid on & simmer until tender.
- Add Tofu and arrange – lid on & simmer until tender.
- Add Rice Noodles in the center of pot.
- Add all vegetable Ingredients : Chinese Cabbage, White Onions, Leeks, Enoki Mushroom and lower the heat simmer for 2 to 3 mins. and serve.
