Serves 4
INGREDIENTS:
2 packages bbq chorizo (Taga, the package comes with 6 small chorizos and it can be use for up to 6 people)
2 can brown beans
4 small baguettes/rundstykker (they sell them in Coop)
200 gr bag of shredded white cheese
2 tsp oil
2 garlic cloves
Salsa pico de gallo :
2 tomatoes (big)
1/2 onion
1 fresh jalapeno chili
2 limes
salt
Salsa verde and roja
DIRECTIONS :
- Using a hand-blender, blend the chorizo until small pieces, and cook them in a fry pan until chorizo turns a little bit crunchy. Set aside
- Add in a small pot oil and a garlic clove, let if fry until it turns brown and take it away
- Add the canned beans with its liquid and let it cook for 2 minutes
- Mash the beans and let them cook 5-10 minutes
- Pre-warm the oven 200 degC
- Cut the baguettes in half
- Add on the top the beans, chorizo and cheese
- Place them inside the oven, and bake until the cheese melts
- Take them out. Let them cool down a little bit
- Add salsa on top
For the pico de gallo :
- Chop finely tomato, onion, and jalapeno
- Mix them in a bowl
- Add one tsp of salt, and the juice of ½ lime
- Mix all and is ready!
