INGREDIENTS:
4 egg yolks
180 gr icing sugar
500 gr fine flour
30 gr potato flour
320 gr butter (room temperature)
150 gr dark chocolate (for glaze)
PREPARATIONS:
- In a bowl add the butter and icing sugar and mix well with a spatula;
- Add egg yolks and continue to mix;
- Add gradually the flour “00” type and the potato flour while still mixing;
- The dough should be rather soft and homogeneous;
- Transfer the dough in a sac-a-poche with the star spout (1.5 cm diameter);
- Shape the dough in “S” on a tray covered with baking paper;
- Bake the biscuits in the oven at 180 °C for 10 min.
