South Italian cuisine with Marialaura: Biscotti a Esse

4 egg yolks
180 gr  icing sugar
500 gr  fine flour
30 gr  potato flour
320 gr butter (room temperature)
150 gr  dark chocolate (for glaze)


  • In a bowl add the butter and icing sugar and mix well with a spatula;
  • Add egg yolks and continue to mix;
  • Add gradually the flour “00” type and the potato flour while still mixing;
  • The dough should be rather soft and homogeneous;
  • Transfer the dough in a sac-a-poche with the star spout (1.5 cm diameter);
  • Shape the dough in “S” on a tray covered with baking paper;
  • Bake the biscuits in the oven at 180 °C for 10 min.
