PONZU SAUCE
serves 6
INGREDIENTS:
- 1 cup vinegar
- 1 cup soy sauce
- ¼ cup sake
- 1 cup katsuobushi (bonito flakes)
- ¼ cup sugar
- 4-5 lemons (⅔ cup lemon juice)
Mix all the ingredients together and adjust according your taste
SPICY MAYO
serves 6
INGREDIENTS:
- 4 parts mayones
- 1 part chili sauce (sambal or sriracha)
Mix all the ingredients together and adjust according your taste
TEMPURA BATTER
serves 6
INGREDIENTS:
- ½ cup all purpose flour
- ½ cup corn starch
- ¾ cup cold water
- ¼ cup sake
- 1 egg
- salt to taste
Whisk all the ingredients together. You can use shrimps, fish, vegetable for the Tempura. Just soak them in this sauce and then in flour+salt+pepper. Deep fry until you have a nice brown color
