Thai cuisine with Ratcha: Aubergine dish

Serves 4


200 gr aubergine
1 clove garlic
4 chili
1 cup thai basil leaves
2 tbsp bean paste
2 tbsp oyster sauce
½ tbsp soya sauce
1 tsp sugar
3 tbsp frying oil
¼ cup water


  • Chop aubergine to slices about 1 cm thick. 
  • Crush chili and garlic.
  • Fry garlic, chili on medium heat, add aubergine when the garlic is golden. Once the aubergine is fried add water. 
  • Once the water is boiling add bean paste, oyster sauce, soya sauce, sugar. After all the ingredients have been mixed in the pan add basil and fry for few minutes then turn off the heat.
