THai with Kittykania – Massaman Curry

serves 4 

INGREDIENTS: ts = teaspoon tbsp = tablespoon 

 Set 1 :

3 tbsp Coriander seeds
10 pieces Cardamom
7 pieces Mace
3 tbsp Cumin seeds
5 Bay leaves
1 Nutmeg
2 tbsp Clove

Set 2 :

4 Coriander roots
4 Garlic
2 Shallot
5-6 Dried chili
1 ts Salt
20 g Ginger
4 Cinnamon stick
4 tbsp Peanut
1 box Coconut milk
2 tbsp Tamarind sauce
2-3 tbsp Palm sugar
400 g Potato
1 Onion
4 Chicken thighs
2 tbsp fish sauce



  • Cook “set 1” ingredients in a hot pan without oil for 2-3 minute until it smells good. Put it aside.

  • Put together ingredients set 1 and 2 in the blender and mix it into paste

  • In a pan with some oil cook the Massaman paste until it fragrant then add chicken thigh and some chop potatoes and chop onion and mix it well
  • Add some coconut milk into the pan. Let it cook for 15 minute or until potatoes are soften
  • Season it with palm sugar, fish sauce and tamarind sauce then add peanut
  • Serve with rice and crispy shallots
